Watermelon  Soup — with Feta!!




What do we still have right now in Southeast Texas?  Even though it’s September, we still have the sweet summer taste of watermelons. . .watermelon is still in season!  Albiet not for long, pumpkins are quickly replacing them in the produce aisle shortly.


While we still have them, let’s put them to good use… and in a No COOK nutritous way.

Prep time 15 min


9 cups seedless watermelon

2 tbs chopped spearmint

1 tbs chopped cilantro

2 cups diced pineapple

1 tbs organic honey

¼ cup sparkling water

8 teaspoons crumbled feta

8 whole spearmint leaves


(serves 8)


1. in medium bowl, combine 1 c watermelon with the mint and cilantro. set aside


2. in a blender, pulse the remaining watermelon, pineapple, honey and sparkling water until smooth.


3. using a mesh strainer, strain soup into a large bowl and serve into 8 bowls. Top each bowl with ⅛ of the reserved mixture and 1 tsp of feta, and one mint leaf

89 cal; 1 g fat (0.5 g sat fat); 21 carb; 1.8 g protein; 1.4 g fiber; 38 g sodium

Why we love this:

Watermelon is loaded with a super antioxidant, lycopene.  It helps reduce the LDL (bad cholesterol) in your body. It also is a booster for your skin, protecting it from the sun.
